Pan con tomate & Tinto de Verano

This is summer at its easiest: a glass of Tinto de Verano and a platter full of toasted bread with ripe tomatoes and garlic, our mix of the classic Spanish Pan con Tomate and the Italian crostini with tomato. We are taking a short break from our Kitchen Tables and will post irregularly over the next couple of weeks, but will be back in August! See you then, and enjoy your summer!

Pan con Tomate

Snack, serves 6-8

1 loaf of bread (such as ciabatta or baguette), sliced
olive oil
1-2 cloves of garlic, halved
a few tasty, ripe tomatoes
a few leaves of basil, shredded

1. Preheat the oven grill. Sprinkle some olive oil over each slice of bread. Place the slices of bread under the grill and toast 1-2 minutes on each side until golden. Rub the slices of bread with the garlic.

2. Quarter the tomatoes, remove the seeds and chop the tomatoes. Place a spoonful of the tomatoes on each slice of bread, garnish with some basil. Season to taste with salt and pepper.

Tinto de Verano

Serves 4

4 cups/1 litre of lemon soda (such as 7-Up, Fanta Limon or Sprite)
4 cups/1 litre of red wine
ice cubes
lemon or orange wedges
some fresh mint leaves

Put the ice cubes in glasses. In each glass pour equal parts of soda and wine. If the drink is too sweet to your taste, add a splash of sparkling water. Garnish with a lemon or orange wedge and some leaves of mint.
