Hazelnut cookies with orange flower water

You could make these cookies with your eyes shut! I wanted to bake something very easy after school, so I decided to make these hazelnut cookies. I added some flower water because it’s blossom time, the trees in my street are blooming abundantly. And because I love orange flower water! I used a little, because its flavor can be overpowering if used too heavily. The cookies are great with fresh mint tea!

Makes about 12 cookies
Action time: 25 minutes

4.5 oz/125 g hazelnuts, plus 12 whole hazelnuts
3.5 oz/100 g granulated sugar
1 egg white
grated zest of 1/2 orange
2 tsp orange flower water
1 tbsp flour, plus extra for dusting

Extra: food processor, baking sheet lined with parchment paper

1. Preheat the oven to 175 C /350 F. Pulse the hazelnuts in a food processor until finely ground.

2. In a bowl mix the hazelnut flour with the sugar, egg white, orange zest, orange flower water, and flour until you have a sticky dough. If the dough is too sticky you can add a little more flour.

3. Dust your hands with some flour and form about 12 balls from the dough. Place the balls on the baking sheet and flatten them slightly. Press a whole hazelnut into the top of each cookie. Bake the cookies for about 12 minutes or until they are golden brown around the edges. Remove from the oven and let cool on a wire rack.
