Waarom hebben we in Nederland eigenlijk geen traditie van warme wijn? In Duitsland, Zwitserland en Oostenrijk drinken ze het, Engelsen en Amerikanen hebben hun mulled wine, en Denen drinkenglögg. Die lijkt in de originele vorm ook op Glühwein, maar dan met amandelen en rozijnen. Vriendin U. komt uit Kopenhagen en woont nu in Berlijn. Zij maakte haar eigen, witte variant met een soort Franse twist. De exacte hoeveelheden kreeg ik niet van haar, dus dit wordt er eentje uit de losse pols.
Serves 6
Soaked apricots (additional):
approx 15 dried apricots, sliced
a dash of calvados
For the mulled wine
3 cups/750 ml dry white wine
2 cups/500 ml apple juice
7 tbsp/100 ml calvados
juice & peel of 1 orange
3 star anise
1 vanilla pod
5 peppercorns
1. Soak the apricots overnight in the calvados. A quicker way of doing it is to heat the calvados in a small pan and add the apricots. Turn off the heat and let stand for 1 hour.
2. Put all other ingredients in a large pan, bring to a boil and turn the heat down to low instantly. Let it simmer on the stove for about 1 hour.
3. Place some of the soaked apricots in a heat-proof glass and pour the mulled wine over.
GOOD TO KNOW: For children or those of you not drinking alcohol: heat 1,5 liter of apple juice and add the same spices as mentioned above. Smells the same, and nearly as festive.
