Vegan Bircher Muesli

One of my favorite breakfast recipes from our cookbook is this Vegan Bircher Muesli. It’s slightly different from another recipe for Bircher Muesli I shared on the blog before but just as good, creamy and healthy. And yes, vegan. I made it with home made almond milk, which is a little time consuming to prepare but very rewarding. And if time is not on your side, just buy the almond milk at your local grocery store. Bircher Muesli tastes best if made the night before.

For the cookbook, I prepared this recipe with summer fruits like plums, raspberries and blueberries, but of course you can substitute them for grated apple and diced pear.

Serves 4
Action Time: 15 minutes + 6 hours of soaking + 1 night in the fridge

For the almond milk:
5.3 oz/150 g white almonds
25 fl oz/750 ml cooked or filtered water

For the muesli:
10.5 oz/300 g rolled oats 
3.5 oz/100 g sunflower or pumpkin seeds
4.5 oz/125 g blueberries
4-8 prunes, deseeded and chopped
4 very ripe bananas, mashed
1 tbsp lemon juice
2 tbp honey
extra raspberries and/or blueberries, to serve

Extra: food processor or blender, fine sieve, cheesecloth, a clean bottle with a cap, plastic foil

1. Soak the almonds for about 6 hours (or overnight) in lukewarm water.

2. Drain the almonds and rinse well; do not throw away the soaking liquid. Put the almonds together with 8 fl oz/250 ml of the soaking liquid into the food processor. Blend for about 3 minutes. Add the remaining water, blend for another couple of minutes until you have a thick, creamy mixture. Place a strainer over a bowl and place the cheesecloth in the strainer. Strain the almond milk: a lot of almond pulp will stay behind in the cheesecloth, squeeze all the milk out with your hands. Pour the milk in a clean bottle and store in the fridge for about 4 days.

3. With a fork, mix the oats, seeds, blueberries, prunes, banana, and lemon juice in a bowl. Add the honey and almond milk and mix well. Divide the mixture over 4 bowls, cover with plastic foil and place in the fridge overnight. Serve the next morning with some extra red fruit.
