Roasted Winter Roots with Walnut pesto

I’m always a little surprised how much weather and food are connected for me. It’s going to be a cold week here in the Netherlands, with temperatures below zero degrees Celsius, so I’m feeling like eating stews, soups, sauerkraut with smoked sausages, and so on. Home-Smoked Sockeye Salmon with Beet Salad

Happy New Year! Eat thoughtfully, cook and live joyfully! This was our festive but simple New Year’s Day lunch: home-smoked wild Sockeye Salmon with a roasted beet-celery salad on top of a creamy hummus. It looks like a lengthy recipe, but in fact it consists of a couple of small make-ahead recipes, so no stress at the very last moment here. Rose-hip jam

I live about ten minutes away from the beach, where we go very often in the summer. To get to the beach, you have to walk through the dunes, where there are a lot of rose-hip plants blooming this time of year. I’ve always wanted to try making rose-hip jam so this year, I gave it a try. I love the idea of picking fruit in nature and turning it into something delicious. (more…)

Tropical Truffles

The weather is finally starting to get a little better in The Netherlands! That’s why I decided to make these Tropical Truffles. These delicious truffles include all kinds of tropical flavors that make you think of the beach. Besides being delicious, they’re pretty healthy too! It is a very easy recipe that only has 5 ingredients. Basically all you have to do is combine the ingredients, make them into little balls and cover them with chocolate. Sunshine Smoothie

Hello, sunshine! Yesterday we prepared almond cashew milk and today we make this sunny smoothie with mango, fresh ginger root, and turmeric with it. Ginger root and turmeric add extra flavor and some spiciness to the drink, plus these roots are also good when you want to save yourself from an upcoming cold. Something you cannot afford today. Nut milk & Nut truffles

What is love? For me it’s teaching your children how to take good care of themselves and show them how to cook with attention and passion. So this weekend I’ll spend some time in the kitchen with my two daughters to make wonderful healthy things based on nut milk: chocolate truffles (made with the leftover nut pulp of nut milk) and smoothies.
