Strawberry Frozen Yogurt

Strawberry time! This frozen yogurt is one of our summer success recipes. Really, it’s sooo easy to make. Basically, all you need are sweet ripe strawberries, good quality yogurt, a lemon, and sugar. And an ice cream maker, but this doesn’t have to be a fancy expensive one. I once bought a cheap one and it still does the job. I like my frozen yogurt very soft, almost melting, so I eat it right away and don’t put it in the freezer to firm it up.

Sweet, serves 4
Action Time: 15 minutes, plus 25 minutes freezing

14 oz/400 g fresh sweet ripe strawberries, hulled and halved, plus some extra
3.5 oz/100 g cane sugar
finely grated zest and juice of ½ lemon
14 oz/400 ml whole milk plain yogurt (you can also use nonfat, but it will not be as creamy)

Extra: blender, ice cream maker

1. In a bowl, mix the strawberries with the sugar, lemon zest, and lemon juice. Wait a little until the sugar starts to dissolve.

2. Put the strawberries with all the juices in a blender. Add the yogurt and blend until smooth.

3. Churn in the ice cream maker for about 25 minutes, until it’s frozen and soft. Put in individual bowls or glasses, garnish with some strawberries and eat immediately.

TIP
If it’s hot outside (and if you don’t have the air-conditioning at it’s highest setting) it’s best to first chill the blended yoghurt mixture in the fridge for about an hour or so. This way it will freeze better in the machine.
